Healing AIP Coconut Bliss-Balls

A devious 'treat' that is packed full of healing and anti- inflammatory superfoods, direct from Mother Nature.

  1. 180g unsweetened desiccated coconut
  2. 200g dates, pitted and soaked in warm filtered water for 5 minutes.
  3. 1/4 teaspoon vanilla powder (optional)
  4. A pinch of salt
  5. Organic orange peel from 1 orange (just the orange layer, no pith)
  6. I used 5 drops of Frankincense, 5 drops of Wild Orange and 5 drops of Lemon
Anti-inflammatory Oils that can help with autoimmune diseases
  1. Grapefruit
  2. Frankincense
  3. Lemongrass (great for thyroid issues)
  4. Lemon
  5. Wild Orange
  6. Peppermint (also great for digestion)
  7. Clove (great for thyroid issues)
  8. You could even add some of the Kakadu Plum powder in these to give it even more healing power!
  1. Place all ingredients in a food processor and pulse until combined, thick and sticky.
  2. Roll into little balls by pushing and molding these truly healthy treats until they resemble the size of a small bouncy ball.
  3. Place in an airtight container and store in the fridge for 2 weeks or in the freezer for up to a month.
  1. Mickey calls them a macaroon, for me to be a macaroon they would need toasting, and you can toast these. These however are so simple the kids could whip them up for their school lunches and an afternoon treat to go!
