First week on the AIP protocol and I’m feeling a bit overwhelmed. My first thoughts were, what the hell am I going to eat?! No eggs, no seeds, no nuts! No honey!
I’m not going to lie, it’s been tough. I’ve had sweet cravings from out of nowhere and some very strange bloating. So I have followed the Ten Week Plan as closely as I could. I made chia pudding with coconut milk and vanilla, and added fruit for breakfast and a sprinkling of shredded coconut. This worked well as I don’t eat breakfast per se so I have this around 11am. I changed the meat dishes to fish, and omitted the eggs, added lots of extra good fat and by day 4 I found myself sleeping better. For lunches I have made avocado and salmon or sardine salads with fermented veggies, beetroot, cilantro, coriander with a mango and lime dressing. I’m eating 1-2 zucchinis a day sliced and dehydrated with some salt to snack on when I get a sweet craving. These are magic, they feel naughty and really do the trick. I have begun drinking more water and I drink carbonated water in the evenings in a wine glass and some ACV. It feels very posh. Another meal was a simple garden salad but mixed up with some pear, homemade sauerkraut and lots of crispy kale throughout, simple but oh so good. Then Bendy made this amazing curry inspired cauliflower fried rice with silver beet, kale, spinach, lots of mushrooms and onion toped with some poached in a bag, wild caught salmon fillets and drizzles of olive oil. Weekend brunch was three different types of mushrooms, asparagus, avocado cooked in macadamia oil and sauerkraut. So in all wasn’t as sad as I thought it was going to be. I have made a seafood and mango sushi for lunch this week and a bag of zucchini chips. I’m also being more adventurous in the herbal tea line.
