Pumpkin Cup Cakes with Choc Orange and Cinnamon Frosting

Pumpkin Cup Cakes
A delicious moist cupcake with all the tastes of Halloween or Autumn. Enjoy these anytime of the year. The frosting is to die for!

Cup Cakes
  1. 1 cup almond flour
  2. ¼ cup coconut flour
  3. ½ teaspoon sea salt
  4. ½ teaspoon baking soda
  5. 1 teaspoon cinnamon
  6. ½ teaspoon pumpkin pie spice
  7. ¾ cup pumpkin
  8. ¼ cup maple syrup or honey
  9. ¼ cup coconut oil
  10. 3-4 eggs
Frosting
  1. 1/2 cup of cacao butter
  2. 1/2 cup of cacao powder
  3. 1/3 cup of coconut oil
  4. 1 avocado
  5. honey to taste (I used aprox 1/4 cup)
Instructions
  1. For the Cup Cakes;
  2. Combine all wet ingredients in a bowl
  3. Combine all dry ingredients in another bowl
  4. Mix both bowls together until well incorporated
  5. Pour into greased loaf pan and bake for 25-30 minutes.
  6. For the Frosting;
  7. Slowly melt the cacao butter, honey and cacao powder in a saucepan over a low heat until melted.
  8. Take of the heat and let cool completely.
  9. In a small bowl mash the ripe avocado with a folk.
  10. Using a blender ( I use a hand held one) stir the avocado into the chalet mixture and blend until smooth.
  11. Add in 6 drops of doTerra Wild Orange Oil and some Cinnamon or grate some orange zest and add some cinnamon powder and mix.
Notes
  1. One you have blended the frosting let it firm up slightly (if needed) in the fridge.
  2. Spoon onto the cup cakes and top with cacao nibs and pop in the fridge for 10 minutes for the frosting to set.
