Banting Nut Free Vanilla Chewy Cookies
A yummy chewy cookie that you can personalise to suit your tastes.

Ingredients
  1. 80gs Shredded Coconut or Dessiciated Coconut
  2. 140g Butter (this is a Banting/LCHF recipe only suitable for those who have no dairy issues)
  3. 120g Honey
  4. 1/2 tsp Bicarb/Baking Soda
  5. 1 tsp Vanilla Powder/Extract
  6. 1/2 Cup Tapioca Flour or Arrowroot
  7. 1/4 Cup Coconut Flour
Additional Toppings
  1. Extra Coconut
  2. Cinnamon
  3. Cacao Nibs
  4. Spices
Instructions
  1. If using shredded coconut, in a blender, blend the coconut on high for 5 seconds. Empty into a bowl and set aside.
  2. Add the butter and honey in a saucepan over a low heat until melted and stir gently until combined.
  3. Take off the heat.
  4. Add all the remaining ingredients and stir thoroughly. Let mixture sit for 5 ins for the coconut flour to absorb and mixture becomes thicker.
  5. Depending on what type of coconut/flour you have used, you may be able to form balls of cookie dough with your hands and press gently on a tray with baking paper.
  6. If still a little runny use a small spoon and drop 50c sized circles of mixture on the baking paper, leaving a gap as they will spread when cooking.
  7. Add any addition toppings now and place in the oven at 150 degrees for 20 Mins
Thermomix Instructions
  1. If using shredded coconut, blend the coconut on speed 8 for 5 seconds. Empty into a bowl and set aside.
  2. Add the butter and honey in main bowl at 80 degrees for 1 min Speed 1.5
  3. Add all the remaining ingredients mix for 10secs @ speed 2. Scrape down sides and repeat.
  4. Let mixture sit for 5 mins for the coconut flour to absorb and mixture becomes thicker.
  5. Depending on what type of coconut/flour you have used, you may be able to form balls of cookie dough with your hands and press gently on a tray with baking paper.
  6. If still a little runny use a small spoon and drop 50c sized circles of mixture on the baking paper, leaving a gap as they will spread when cooking.
  7. Add any addition toppings now and place in the oven at 150 degrees for 20 Mins
Notes
  1. If you want these soft and chewy, don't over cook thinking they aren't done. They harden when cooled completely.
  2. Great for an extra winter treat, or a special lunch box day as they are NUT FREE!
